Chocolate Stuffed Dates
A Postpartum Favourite Recipe
Craving a snack that’s both nourishing and indulgent?
You’ll love this recipe. These chocolate-covered dates are a deliciously decadent treat, perfect for new mums needing a one-handed snack during the postpartum season.
I was lucky enough to learn this recipe from Sami, a fellow Newborn Mother’s graduate at The Hold, and it’s quickly become a Blossom Motherhood favourite.
Ingredients
500 g Medjool dates
150 g nut butter - almond or peanut butter
200 g dark chocolate
Toppings — here’s where you can get creative! Think goji berries, rose petals and pepita seeds.
Optional to supercharge: ½ tbsp “Forage for You” The Mother’s Blend
Method
1. Prep your dates
With a sharp knife and make a vertical cut along each date to open it up. Gently remove the pit, creating the perfect little pocket for your filling.
2. Mix your nut butter blend (optional)
If you’re using the “Forage for You” The Mother’s Blend stir it into your almond or peanut butter until it’s all well combined.
3. Stuff your dates
Spoon a heaped teaspoon of the nut butter mixture into each date’s cavity. Press the dates closed to keep all that goodness inside. Want to get fancy? Add a spoonful of berry and chia jam for a fruity twist!
4. Melt the chocolate
If you’ve got a Thermomix, pop the chocolate in and set it to 45°C at speed 1.5 for 10 minutes. No Thermomix? No worries—melt your chocolate gently in a bain-marie on the stove, using a thermometer to keep it around 45°C.
5. Get ready to dip
Line two trays with baking paper. You’ll use these to keep your chocolate-coated dates neat and tidy.
6. Dip those dates
Working in batches of 4, place the dates in the Thermomix bowl and gently spin them around between the blades using two spoons to coat them evenly (or in the bain-marie). Lift each date out carefully and place it on the first tray.
7. Transfer & decorate
Once coated, move the dates from the first tray to the second to avoid any sticky bits. While the chocolate’s still warm, get creative! Pop a single Goji berry on top of each date or chop the goji up for some extra texture.
8. Freeze to set
Pop the tray in the freezer for 5 to 10 minutes until the chocolate sets. Then, enjoy immediately (letting them thaw just a bit), or store in an airtight container in the freezer. They’re perfect for a quick postpartum snack.
These chocolate-stuffed dates are more than just a treat—they’re a delicious way to support yourself through postpartum. Give them a try, and let me know how you go!
